Braised Beef in Red Wine Sauce

Ingredients   Instructions
  1. Preheat oven to 350 degrees.

2 lb(s) top sirloin steak
2. Cut steak in 1/2-inch cubes. Preheat a Le Creuset French oven over medium to medium-high heat. Add a small amount of oil to the pan and sear the meat in small batches. Reserve the meat in a bowl.
1/4 cup(s) celery, chopped
1/4 cup(s) carrots, chopped
1/2 cup(s) onions, chopped
3. Add the onion, carrot, and celery to the pot and saute until caramelized.
1 lb(s) fresh mushrooms, diced
4. Add the mushrooms and cook two minutes.
1 Tbsp(s) tomato paste
1 Tbsp(s) garlic, minced
5. Add the garlic and tomato paste and cook 30 seconds.
1/2 Tbsp(s) thyme
1 cup(s) dry red wine
2 cup(s) beef stock
6. Add the wine, beef stock, and thyme and bring to a boil. Return the meat to the pan and bring to a boil. Cover and place in the oven for 1.5-2 hours.

7. Remove from the oven and add cornstarch and water slurry. Boil on low heat for 15 minutes. Season to taste.
