Shaved Asparagus and Spiral Squash Saute

2 Shallots, Thinly Sliced
6 Stalks Asparagus
Spices & Seasoning 1 Tbsp(s) Pepper to Taste
.25 tsp(s) Red Pepper Flakes
1 Tbsp(s) Salt to Taste

Ingredients   Instructions
2 Tbsp(s) Olive Oil
1 clove(s) Garlic, Minced
2 Shallots, Thinly Sliced
1. Place a large skillet over medium heat and add in the olive oil. Add garlic and shallots to oil. Cook until lightly browned.
6 Stalks Asparagus
2. While the garlic-shallot mixture is cooking, snap the bottoms off the asparagus and shave with a vegetable peeler, starting from the bottom of the asparagus tips all the way down to the end of the stalk. When done shaving, chop off the tips and set aside. Set aside all shavings and tips.
.25 cup(s) Vegetable Broth
2 Tbsp(s) Fresh Chopped Parsley
2 Large Yellow Squash, Spiral Sliced
1 Large Zucchini, Spiral Sliced
1 Medium Spaghetti Squash, Roasted
6 Stalks Asparagus
1 Tbsp(s) Pepper to Taste
.25 tsp(s) Red Pepper Flakes
1 Tbsp(s) Salt to Taste
3. Add in the squash and zucchini noodles and red pepper flakes. Season with salt and pepper. Toss to combine. Add vegetable broth and parsley. Let cook, stirring occasionally for about 5 minutes; add in the spaghetti squash, shaved asparagus and asparagus tips. Toss to combine and let the noodles finish cooking.
.25 cup(s) Grated Parmigiano Reggiano, Optional to Garnish
4. When mixture is done, plate into bowls and garnish with optional grated cheese.
