Baked Sweet Potato Latkes

Ingredients   Instructions
  1. Preheat oven to 400 degrees F. Spray a cookie sheet with nonstick spray or use parchment paper or a silicone mat.
2 eggs, beaten
.25 tsp(s) baking powder
.25 cup(s) flour
2 Tbsp(s) chives, minced
1 medium red onion, grated
2 lb(s) sweet potatoes, grated
2 tsp(s) Salt Sisters Honey Glaze Rub
2. In a large bowl, combine all ingredients. Drop by tablespoons onto cookie sheet. Flatten with spatula. Bake for 6 minutes; flip and bake for another 6-8 minutes or until crisp.
  3. Top with Marshmallow Sour Cream (see recipe) and return to the oven and broil until lightly browned.
