Zucchini and Sausage Pie
A good make ahead dish for brunch.
This dish freezes well once cooked.
|3 Tbsp(s) Butter
8 oz. Sliced Mushrooms
|1.||Saute sliced mushrooms in 3 tablespoons butter and set aside.|
|1 Medium Onion
2 cup(s) Coarse Chopped Zucchini
|2.||Add more butter to saute pan and saute coarse chopped zucchini and onion, chopped until soft and all the liquid has evaporated. Set aside.|
|1/2 lb(s) Bulk Sausage
||3.||Brown and chop the bulk sausage into small pieces.|
|1 cup(s) Diced Firm Apples
1/8 tsp(s) Fresh Ground Pepper
1/4 tsp(s) Salt
1 Tbsp(s) Butter, Melted
2 Eggs, Lightly Beaten
4 Tbsp(s) Grated Parmesan Cheese
1/2 cup(s) Half & Half
1 cup(s) Milk
1 cup(s) Flour
2 cup(s) Grated Swiss Cheese
|4.||Mix grated swiss cheese, flour, milk, half & half, grated parmesan cheese, eggs (lightly beaten), melted butter, salt & pepper, nutmeg and fine diced apple. Mix well.|
|5.||Add the sausage, mushrooms, zucchini and onion to the mixture. Pour into a baking dish. Bake at 400 degrees for 40 minutes or until done.|
