Global Japanese knives are known for their unique balance, edge, seamless construction, and material. Globals are made from the finest high carbon stainless steel, CROMOVA 18, which is hard enough for knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the them. The majority of Global knives are ground to a point rather than beveled like western knives, resulting in a dramatically sharper knife which stays sharper longer. To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance, so they do not have a bolster or full tang. Smooth, seamless construction offers the ultimate in food safety and hygiene.
G and GS series Globals are lighter weight knives than their other series, which is more characteristically Japanese. Global is best known for its lighter weight knives.
