Zucchini and Sausage Pie

A good make ahead dish for brunch.

This dish freezes well once cooked.

Ingredients

Instructions

8 oz. Sliced Mushrooms
3 Tbsp(s) Butter

Saute sliced mushrooms in 3 tablespoons butter and set aside.

2 cup(s) Coarse Chopped Zucchini
1 Medium Onion

Add more butter to saute pan and saute coarse chopped zucchini and onion, chopped until soft and all the liquid has evaporated. Set aside.

1/2 lb(s) Bulk Sausage

Brown and chop the bulk sausage into small pieces.

2 cup(s) Grated Swiss Cheese
1 cup(s) Flour
1 cup(s) Milk
1/2 cup(s) Half & Half
4 Tbsp(s) Grated Parmesan Cheese
2 Eggs, Lightly Beaten
1 Tbsp(s) Butter, Melted
1/4 tsp(s) Salt
1/8 tsp(s) Fresh Ground Pepper
Dash Nutmeg
1 cup(s) Diced Firm Apples

Mix grated swiss cheese, flour, milk, half & half, grated parmesan cheese, eggs (lightly beaten), melted butter, salt & pepper, nutmeg and fine diced apple. Mix well.

 

Add the sausage, mushrooms, zucchini and onion to the mixture. Pour into a baking dish. Bake at 400 degrees for 40 minutes or until done.
