Butternut Squash Soup
A low-fat, creamy version of this luscious fall squash. This recipe is from EatPicks.com.
|1 large butternut squash, peeled and cubed
||1.||Peel and cut squash in half. Remove seeds. Cut squash into large cubes.|
|32 oz. chicken broth
1 large butternut squash, peeled and cubed
|2.||In large stock pot combine squash cubes and chicken broth and bring to a slight boil. Cook until squash is tender.|
| Salt & Pepper
.25 lb(s) butter
2 clove(s) garlic, minced
1 medium onion, chopped
|3.||Meanwhile, in medium fry pan, saute` onions & garlic in butter until translucent. Add salt & pepper.|
|4.||Remove cooked squash from broth with slotted spoon and add to blender. Reserve all liquid in pot.|
|5.||Add cooked onions, garlic and .25 cup of reserved broth to blender.Blend/puree` until smooth.|
|6.||Slowly add pureed squash back into liquid in pot and stir well. Garnish with a few croutons.|
