Delicious grilled vegetables that can be added to many meals. The vegetables listed below are only suggestions, use the fresh garden vegetables that you have available.

The grilled vegetables can be placed in freezer bags and frozen.

Ingredients   Instructions
Portabella Mushrooms
1 cup(s) Eggplant
1 cup(s) Yellow Squash
1 cup(s) Zuchini
1. Slice the zuchini, squash and eggplant diagnally into long 1/2 inch thick slices.
Extra Virgin Olive Oil
Italian Seasonings
2. Drizzle with olive oil and sprinkle with Italian seasonings.
  3. Preheat grill on high. Spread vegetables on the grill and cook for 2-3 minutes, then flip. Remove vegetables from the grill when they are tender-crisp.
