Prepare this sausage and peppers dish in the summer using fresh garden vegetables or as a warm meal in the winter. If you have homemade tomato sauce, substitute the homemade tomato sauce for the canned tomato sauce.

Store in the refrigerator or freeze in meal size portions.

Ingredients   Instructions
1 lb(s) Hot Italian Sausage Links
1 lb(s) Sweet Italian Sausage Links
1. Slice the sausage links into 1/2 inch wide pieces and brown in a frying pan.
16 oz. Tomato Sauce
2. In a large stock pot or slow cooker, add the browned sausage to the tomato sauce.
4 Large Red Peppers
4 Large Green Peppers
1 Medium Yellow Onion
3 clove(s) Garlic
3. Dice the onion and garlic; brown in the frying pan. Add the browned onion and garlic to the pot. Chop half the peppers and slightly brown in the frying pan. Add the peppers to the pot. Simmer for hours.
4 Large Red Peppers
4 Large Green Peppers
4 Small Roma Tomatoes
8 oz. Tomato Paste
4. 30 minutes before serving, chop the tomatoes. Add the tomatoes and the remaining peppers to the pot. Add tomato paste to thicken if necessary.
